Chicken Curry!


Chicken Curry

Rotisserie chicken (I buy one chicken break it down and toss in a few handfuls… Measuring is not my gift)
1 can pumpkin
1 can tomato paste/ or sauce
1 can fire roasted tomatoes
1 can coconut milk
1 red onion
1/2 a yellow bell pepper
1/2 a red bell pepper
1 zucchini
Spoonful of minced garlic
Splash of chicken broth
Few spoonfuls of curry

Toss all of this into the crock on low. Come back 3 hours later. Enjoy!

-We had a busy day so we cooked in the crock for convenience but this can easily be made on the stove. You can change up the veg, and the sauce this is pretty much fail proof. I’ve used frozen veg before, sometimes I sneak a sweet potato in or a can of rotel for extra spice. Have fun with it!
